The region of Popayan is very rich with rainfall, covered with clouds which are formed from the pacific coast and as such is ideal for coffee growing. Cold, mountainous weather prolongs the time of vegetation of the coffee cherry and it deepens the taste and outcomes with strong forest fruit flavour.

Taste profile: Wide range of floral and fruity aromas, dominant sweetness and acidity of green apple, forest fruits, complex coffee, fantastic in combination with milk. When medium roasted, it adjusts well to all types of preparation. Brew methods will showcase the fruity tones, french press and aero press will emphasize the full body, and espress will round all the good characteristics. Recipe for "French press": 55-60g of coffee, coarsely ground; 750ml water , T = 91C-96C. Put the water to boil, grind the coffee and measure it, pour it in the french press bowl, wait until the temperature drops until 91C-98C and pour 200ml of water over the coffee. Now you should wait around 30“ of extraction and pour the rest of the water. Wait 3-4 minutes of extraction, depending on the intensity which we want to achieve. Mix the coffee together with foam, the rest of the foam skim and throw, put the grid cover and slowly move it towards the bottom of the bowl. Pour into the preheated cups.
